Compared to dining out, this is faster, fresher, and far more satisfying.
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil. Cook the fettuccine until al dente according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
Step 2: Sear the Chicken
While the pasta cooks, season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove from pan and let rest before slicing.
Step 3: Make the Alfredo Sauce
In the same skillet, lower heat to medium. Add butter and minced garlic, sautéing until fragrant (about 1 minute). Pour in the heavy cream and stir until it begins to simmer. Slowly whisk in Parmesan cheese until smooth and creamy.
Step 4: Combine Pasta and Sauce
Add cooked pasta to the Alfredo sauce, tossing to coat. If the sauce is too thick, add reserved pasta water a little at a time. Slice chicken and layer on top of the pasta.
Step 5: Garnish and Serve
Sprinkle with fresh parsley and a bit more Parmesan if desired. Serve hot and enjoy your homemade Chicken Alfredo!
